View Full Version : Cooking eggs in bacon grease

It has been mentioned several times here and on 70sbig about cooking eggs in the bacon grease after you skillet the bacon (rather than using butter) but I am looking for a little clearer directions. I mentioned it to my aunt and she recommended that after I cook the bacon I dump all but the thinnest layer of grease to coat the pan and then put the egg batter in. She said that way you avoid a layer of oil all over the eggs. I'm wondering though, because my aunt has much healthier intentions than I do, should I just leave all the bacon grease in the pan after I take the bacon out and scramble the eggs in that? Or is she right?
The reason I ask is because the eggs do not taste much different than normal when I do it her way and was wondering if the 70sbig way was to use all the grease.

If you want to fry the eggs, then leave all the grease. If you just want to scramble them/cook them like normal just leave a coat on the pan. Pretty simple stuff.

From a 70s big perspective, you'd want to leave all the grease in to get as many calories as possible.
From a taste perspective, it depends how much bacon and how many eggs you're making. As a general rule that I made up when I used to do this: if the number of eggs you're making is greater than or equal to the number of pieces of bacon, go ahead and use all of the bacon grease to cook the eggs. If the number of eggs you're making is less than the number of pieces of bacon you're making, get rid of some of the oil because if you don't your eggs will be too oily and foul-tasting.

The best way to do it is to leave the grease in, bite a hole in the middle of a piece (or pieces) of bread, place the bread in the skillet and crack an egg into that hole and cook it all up.
Fried bacon, bread, and egg for the win...

I use a lot more oil for scrambled eggs than fried eggs. Scrambled just seems to soak up all the fat you throw at it.

ive wanted to try that since seeing V for Vendetta when he makes it for Natalie Portman... looks tasty as fuck
when i cook that, do i flip it ever or do i just leave it one side up to cook?

you'll want to flip it over, otherwise the top will be pretty much raw egg.
I never saw V for Vendetta, will have to check it out.
On my dads side of the family, it was called 'gas house eggs', I don't know where that term came from but he was raised in St. Louis.
My second ex-wifes family called them 'Wagon Wheels'.
They set a very solid foundation for a long day of drinking :-)

I flip but my mother-in-law will just splash the hot grease on top of the egg with a spoon to slightly cook the top without flipping and it turns out pretty damn good like that.

Dude no 70s Big man worth his mustache would ever waste good bacon grease. I always cook the eggs in it. Sometimes I even throw in some extra lard in there if the pans not greasy enough. If you must drain off any at least collect it in a drippings jar.

if the eggs are submerged in the bacon grease, is that considered boiling, or deep frying?

It's called "basting" generally - you baste it with the grease. You can do it with water also (needs a lid) but that's a good way to cook the whites of the egg thoroughly when you're afraid that flipping them would break the yolks.
I recommend using all the leftover grease and pouring it over the top of the eggs with a spoon every once in a while.

I read this thread on Friday. I could barely wait until this morning to fry my up some bacon in two large skillets. After removing the bacon but not the grease, I used one skillet for hash browns and the other for fried eggs. Mixed them all up with Tabasco sauce. Mmmmmm. That there is good eatin', my friends.
