Most of what I eat is determined by it having to taste ok cooked the night before (or longer) and eaten cold while at work. I love beef, but find that while what I buy/cook tastes great when eaten freshly cooked it is very chewy when eaten cold, so my beef consumption is not what it could be.
What tips do the professional red meat eaters here have for improving my cold beef?

When you have steak for dinner, cook an extra one. Then slice it up thin and put it in a bowl with a light covering of soy sauce (not swimming in it, just all surface area wet). It makes awesome steak/cheese sammiches.... mmm... sammich.

Also, ground beef is pretty good reheated-as long as you don't go higher than 90 percent lean, the fat does a nice job of keeping the meat moist in the microwave

I think he's looking for cold options, I assume no microwave or stove available at work?
My buddy makes beef jerky from cheap cuts. Slices thin, marinates in soy sauce, rice wine vinegar, various spices (chili flakes, habenaro powder if you're awesome, pepper, salt, cumin, coreander, etc etc) and puts them in his dehydrator. The dehydrator was cheap, like 35-40 bucks.
At at a loss for other cold beef options.

I usually have a microwave available, but generally dont like using it, especially for meat. I do chilli a lot, but looking for other less complicated options.
I've done the steak extra steak thing, but even when cut thinly it still a bit too chewy for my tastes, hence my reliance on chicken which I find far better cold. The steak is generally sirloin so maybe just a higher fat cut?

Okay, how do you feel about taco salad? I make mine from three ingredients: seasoned ground beef, lettuce, and cottage cheese. well that and hot sauce. The cottage cheese is great because it's kinda like a cross between cheese and sour cream, and it keeps things simple. I make a big batch of meat at the start of the week, slice up some lettuce each morning and I keep the cottage cheese in the fridge at work. It's delish.
EDIT: The taco meat re-heats real nice, especially if you make it just a tad runny to begin with.

Are you doing the overnight marinade in soy sauce after slicing it? Should fall apart. Be sure you're sliding it cross-grain and nice and thin.

choose the right cut ..
nothing more delicious than cold thinly sliced roast beef
or flank steak.. when in doubt slice it really thin and bring some
dijon or whole grain mustard ...

"Taco" meat, and lots of it. Chili also reheats VERY well (it actually gets better over time). Carne Guisada, if you can cook worth a crap. Avoid steak, it's worthless once microwaved. Stir fry can reheat OK.

If it's generally inconvenient to reheat your meat (oh surely there's a joke in there) maybe just eat pork at work. I like cold pork much better than cold beef.

Sichuan cuisine has some great cold meat dishes (http://en.wikipedia.org/wiki/Fuqi_feipian). If you have access to those ingredients, you might be able to make something like that at home.
why don't you like using the microwave?
or you could just stop being an emotional eater and just HTFU and eat it.

I rarely use a microwave because I think it makes meat taste like shit.

I like top round steak (london broil). So cheap, lean and full of protein.
I know you said you're looking for cold options, and don't like the microwave. But just a comment, my main source is fajitas. Just beef, a green pepper, onion, and one of the "seasoning" packets.
And, in my opinion it reheats in the microwave very well, and tastes just as good as it did originally.
Might just be me though! I like them because it's so easy to cook, and it tastes good.

Dont forget deli sliced beef. I get mine at Costco since its way cheaper than buying at a regular deli. Provides many satisfying sandwhiches during the week.
