View Full Version : How do I Season Beef + Cabbage + Potatoes?

I'm looking for suggestions on seasoning for my first attempt at Beef and Cabbage. I was inspired by posts that mentioned bigos and chanko. Thanks for any help.

Browned and Drained in colander:
~2 lb 80/20 Ground beef

Baked:
5 new potatoes (small)

Cooked in pan with some beef fat:
half cabbage chopped
cup mushrooms
Chopped and peeled potatoes (boil next time instead of baking)

Added beef into the mix. Smells good!!!

I had to add chicken broth to keep the potatoes from sticking and burning on the pan.
Good thing because it's way better with the chicken broth than it would have been without.
I added salt and pepper along the way.


Next time:
More seasoning - cayenne powder. I hate garlic.
More beef versus the rest of the mix.
Chop/Boil Potatoes instead of baking. Baking made the taters too soft. They mushed and burned on the pan. Although the finished product is quite good. I like how the potatoes thicken it up so it's not soupy at all.
Brown the mushrooms in the beef fat before adding the cabbage and potatoes. They're pretty unnoticeable just in the mix without browning.
Carrots might be good.
I could add more fat and leave the taters out for a lower carb option. Then just add more cabbage or green beans or broccoli or green pepper.

Tomato paste seems to go with everything I make. Also can't skip the black pepper.

When I make cabbage (need to make some more soon) I saute it in butter, then once it's nice and soft, pour some soy sauce in there. Would work with the mushrooms as well. Would add some garlic or garlic powder as well. Fucking yum. Not sure how I'd do potatoes to go with that though...but I would be lazy and nuke them.

If you get the steam bags, nukin the potatos works great. we do yams all the time in like 5mins.

Thanks for the suggestions so far. Made another batch.

Browned 3.5lbs of 80/20 ground beef and drained half of it.

Mushrooms (cooked separately in butter this time. Really good.)
Green beans
Half Cabbage

Mixed with the beef and added
Chicken Stock
Tomatoes
Two small cans of tomato sauce
Chili Powder, Salt, Black Pepper


It turned out pretty good. A lot more beef to cabbage this time. It reminds me of minestrone soup. I added a little cardamon but not enough to tell the difference - I'm a little gun shy when it comes to adding spices. I don't want to ruin a whole batch.

I need to just buy a stock pot or slow cooker. This would have been way easier. Not as much standing over the pan stirring.

Soy sauce was good added to the last batch.
Franks red hot buffalo is good on everything.

Fuck chicken stock, use olive oil.

Season with paprika (you can be generous with this), and chili powder. Cumin also works. Shame you don't like garlic.

If you're up for a bit of a culinary adventure:

Shred the cabbage, sprinkle on a little salt, press it into a big jar, cover with a dish towel, and let ferment under brine in the garage for a week or two. This will take the meal you've described from "ho-hum" to "out-of-this-fucking-world".
