I thought about starting a hot sauce thread, but realised that would be leaving out other tasty sauces.

Hot sauces I like:

Encona Hot Pepper Sauce:
Good because it both contains some heat, and a really good flavour. Mix of scoth bonnets. habanero and importantly some mustard which really compliments. Not too sweet or vinegary like many hot sauces. Excellent with scrambled eggs.

Crystal Hot Sauce:
This stuff is not hot at all. I enjoy it basically as a vinegar with a slight hot pepper kick. Great with fries/chips. Also tastes good with noodles.

Any decent jar of mint sauce:
Very underappreciated & underutlised in my opinion. Is excellent mixed with tomato & chilli hot sauces for a boost of heat, sweetness and flavour. Compliments meat or fish very well. Can be mixed with live yoghurt to make a simple but excellent dip for spicy fried treats.

Sriracha sauce. The rooster brand, which is slightly nontraditional (spicier, less sweet than the "real" stuff), but it's what all the Thai places around here have on their tables, so it can't be that far off.

Lime pickle. Not really a sauce, but, damn. The first time I had it, my Indian roommate had just like put a teaspoon of it on a plate of some kind of mildly seasoned rice and I just ate the plate voraciously, it was so good, and I've always hated rice. I go through a bunch of other pickles, but lime pickle is still the best, IMO. Sometimes I'd eat it with chips like salsa. My tolerance for heat has gone down since then, though, so I don't do that. I don't have a particular brand in mind.

Summer 09 I grew enough peppers (habs, cayenne, jalapeņo) to make 3 jars of hot sauce. I still have 2 jars.

No garden this year because I was in Iraq.

These were precisely the two condiments I was going to post. I also like various other Indian pickles -- tomato and chili are probably the most versatile with non-Indian food. Oh, and ginger.

Lime pickle is definetely win.

But with a hot & spicy meal a sweeter pickly is sometimes nice:

I love Sriracha and Frank's Red Hot is a classic. I always have those 2 in the house. Occasionally I'll get a bottle of Cholula or Tobasco. I'll be on the look out for the ones you guys posted.

What about BBQ sauces? Can anything top Sweet Baby Ray's?

I love the Tabasco Chipotle sauce, but since I'm a cheap bastard, I usually stick with Louisiana brand hot sauce. I just recently picked up a bottle of Sriracha, and have really enjoyed it as well. Can we count a powder as a condiment? I have a big jar of cayenne pepper spice that I sprinkle on a lot of different things, eggs, hamburgers, and I even sprinkle it on my oatmeal, it gets the old motor humming right away during warm-ups.

Oh man! I used to love sweet baby rays, then I visited a friend in Kansas City, night of the living barbecue from Oklahoma Joe's is one I bought a dozen bottles of before I came home. Don't go overboard but it's great.

I think the smaller BBQ sauce makers are much better. I'm sure our friends in other parts of the country have opinions on this matter too, Memphis? St. Louis? East coast? And of course Texas? What have you all got?
