Pigeons taste great. their meat have a distinct flavour and is somewhat red, unlike industrial poultry which is white as cheese.
I tried all different methods for cooking them in the past. I am not a cook good, so I settled with throwing them in stews is the best way.
After I eat the meat, the marble looking bones reveal. unlike industrial poultry bones, they really shine like marble and are dense like marble.
I swallow the smaller parts to get some good amount of slow releasing calcium.
If you have plenty of them in your area, I say go for them.
Just search their guts before cooking carefully, you don't want to eat one with a .22 lead pellet in his/her guts.
