I've stalled at 365x5x3 three separate times now on LP. Is that not a sign in and of itself? Every single workout was a grind just to survive squats. We've used this programming to get one guy to 395x5 (and 415x3) from 365x3 and another from 345x5x3 to 405x5x1. I think this is what is best. You even said yourself that my first set was good at 365. My heavy set was also good this time and, in addition, I did 330x5 and 280x5 with pretty much perfect form. I just think it makes the most sense especially given my diet situation. I'm sticking with 3x5 on my presses for now because it is working so well. I felt so strong by the end of the workout that I knew I had 385 in the bag. I even considered going for a deadlift PR because I was so fresh.
I feel like I'm making the right call. Madcow's style of loading has been used by thousands and thousands of people over the last five years and we all know it works. I'm not inventing my own shit this time. I've pretty much paid my dues when it comes to Rip's novice squat programming and I think I've taken it as far as it is going to go. How much do people usually add to their 3x5 after switching to advanced novice? My buddy was able to get an additional 20lbs. I don't want to take six weeks just to get 20lbs when I KNOW Madcow's will work for quite some time.
Anyways, I'm starting to feel like I'm being redundant. Basically, this is just what I wanna do and I don't see a single down side considering that I just obliterated a life time PR on squats.

Tony's squats are good.
There's the downside of not keeping your word. But I'm also being redundant.
