Wraps, not straps. I see people doing it in videos sometimes, but I never see anyone mention it. What's the advantage there? I assume it helps you grip the bar?

Not going to help you grip the bar. Might be a writs injury, I sprained mine a couple of months back so I wore my wraps constantly to keep as much warmth as possible in the area. Otherwise just fashion, I wear mine for squatting even though it probably does nothing, but it's just part of my routine.
I feel it has it's place but, if you don't need them, don't use them.
I can do 225lbs X 5 without, when I am "feeling it". Anymore than that, I use a strap.

I've personally seen dudes use straps for benching. Not, mind you, just that left the straps on their wrist for some reason, but actually wrapped around the bar while they bench. If there's a good reason to do this, I've never been able to figure it out.
So depending on what vids you're watching it could be either a legitimate reason, simply not bothering to unwrap, or people being weird.
At what weight do people start using them? Im thinking about it - Im around 350 and think its early- but my grip gets a lot of work jerking off and even with the thinner bar It still seems like a limiting factor.
Was planning on trying them at 365 work sets just to see.
tension forces of the deadlift wanting your wrist to pull apart. If you have wrist pain I can see how those forces could make you want to add some stability. Though chances are the person in the video was using them for something else (bench, press, squatting) that is more common and just left them on. I have a bad wrist from a mountain bike crash and the only time i really need to use a wrap is when I snatch because radial deviation is my wrist's daddy.
If it's a crossfit video, more likely its for fashion mostly.
