Training with fatigue

I posted previously when I was having joint inflammation in the wrist and ankle as a result of a flu like virus I had in November 2011. Those symptoms are now almost gone and the fatigue I was plagued with after the virus has slowly been getting better but it is still there and that is why I am posting.
I've had numerous blood tests and x-rays done. My joints are all perfectly fine and I have a clean bill of health. According to every doctor I spoke to this is quite common after a bad virus, and can last up to 18 months with the symptoms slowly getting better.
I sleep on average 8-9 hours a night and wake up feeling like I just had a 20 hour nap. Very lethargic and constantly yawning throughout the day.
Average daily diet -
Breakfast - 5-6 eggs with potato hash. Nuts, cod liver oil and milk until I'm stuffed
Lunch - About 250g of grass fed beef with rice / potato
dinner - Usually 2 chicken breasts with rice and spinach
Before bed - 5-6 eggs boiled for about 2 minutes but still drinkable mixed with some milk. Nuts, fruit / raw vegetables until full.
About 1litre of milk throughout the day
I'm not looking for answers as to why I am tired but possible short term solutions to help me continue training. Sometimes I only fit in 2 workouts a week as I'm too sore to train every other day. I do about 1 day a week of moderate cardio and my job involves quite a bit of lifting.
So hopefully you have all the details, my question is what supplements could I take which would help me with recovery and energy levels? Especially if anyone has ever been a similar situation I would like to hear from you.

You're not eating enough, not nearly enough. Fix that and report back in a week in a new thread. If this does not correct the problem you may still have an active infection. Where do you live, and have you found any ticks on you within the past 2 years?
-
Have you ever had a sleep study done? You may have sleep apnea. Not totally common for someone your size, but it's not always caused by excess weight.

I live in Scotland and have never found any ticks. Lyme disease isn't common here and is usually caught by people who go to Mainland Europe but I will make another doctor appointment and suggest this to them. I've already pissed them off enough by suggesting all the thing it could be, can't hurt to try again. As I look perfectly healthy the doctors don't think this is serious at all. Back in January one Doctor even suggested I was tired from depression because January is a shit month.
Never had a sleep study done but I will suggest that aswell and try gomad on top of what I'm already eating. Thanks for the replies.

Why is he not eating enough? Where is his diet lacking?

Low T also causes chronic fatigue, but if you had bloodwork done I imagine they would have caught that.
