    My preferences:

    Olive Oil
    Coconut Oil
    Kerrygold butter or Ghee
    Avocado Oil

    That's about it :-)

All I've been doing is the top 3 (haven't found ghee in a store around here, although haven't really looked either) for several years. But I've found the avocado oil is wallet unfriendly. Glad I'm FeigainzZz approved.

Recently I have been using bacon fat for my eggs, ghee for sauteeing vegetables, and schmaltz for frying chicken or searing meat. Schmaltz is rendered chicken fat, and it's amazing. If you buy and eat whole chickens, it's free: just cut the excess fat out of the gut cavity and save it until you have enough to render. There are lots of recipes on line for making your own ghee and schmaltz. I also save the chicken bones and make soup stock/bone broth, but that's off topic.

What about canola oil? I read different opinions on it. Some recommend it for high heat cooking instead of extra virgin olive oil.

Canola has a 50*F higher smoke point @ 400*F, but regular olive oil and avocado oil are suitable for high temp cooking at 425 and 400*F, respectively.
