Is it legal to stir the coffee during the pour-over, after the bloom, for better distribution and flow?

Why do we talk about "roasting" coffee beans? Roasting anything usually involves heating it in fat in an oven, but (as far as I know), no fat is involved in roasting coffee. Wouldn't it be more accurate to talk of "baking" coffee beans?
I roast my own, so your preaching to the choir! But I have to ask, what kind of grinder was that?
