You bought the template, and you're asking us? I thought the big selling point for Andy's templates was that they were detailed and specific.
As far as the assistance work goes, you'll probably need to figure it out as you go. A few weeks of focusing on the main lifts will give you a better idea of how much additional stress you can tolerate and which exercises will benefit you most. Chins and dips are a definite yes. GHRs may be overkill at this point if you're already doing 5 sets of SLDLs. At the weight you're at now, you should be able to get quite a bit of hypertrophy from just doing the program before you need to start adding in any targeted assistance exercises.
