    There's a really good segment on the first season of PBS's Mind of Chef with David Chang with Allan Benton in Tennessee. Chang describes the product as "so smoky it's almost medicinal" and uses his bacon in his ramen broth instead of the traditional smoked dried bonito katsuobushi.

    Benton's products have been highly regarded by chefs all over the country. We see the country ham on menus in New York along side jamon Iberico and prosciutto di Parma.

    That non-spiral-sliced ham would be a great treat for the holidays. The bag of coffee on the countertop felt like a tease to me, because I noticed seen some great videos on several Instagram stories (you know who you are) of what I can only describe as demitasse cooked on a stovetop espresso pot, but with copious crema. PLEASE make a video on THAT.

    Looks like a boning or fillet knife. I suppose any fine narrow edge would do.

    I’m not a knife geek, so can’t make my old blades sing. Hence this, recently:

    Almost feels like gravity is the only force required to cut through the fat (+ a Forschner honing steel on eBay for maintenance).
