Mark Rippetoe makes two versions of fried chicken - the Floral Heights Cafe battered chicken, and his mother's non-battered recipe.

Looks amazing. My grandma would make it the no-batter way. That's how she fried her fish, too, whenever we'd have fish and grits. Gonna have to get me one of them deep skillets, those look super handy!

Thanks Mark, looks good. The "pulley" bone you mentioned we use to call the wish bone, when grandma cooked chicken is was baked whole and that piece of meat with the wishbone when the meat was eaten off it was held between the pinky fingers of two kids and whoever got the largest of the bone break got their wish. Of course chicken of those days were free range chickens and big and tasty.

That is what it's called in England too.

Another winner... Texas Cafe Classics undefeated in recipe division. Family agrees with Rip that Mom’s flour only recipe was better.
