What would the experience be with a low performance vehicle? Just for example, if I showed up with a four-cylinder Honda Accord, would I still get anything out of it and just be way slower than everyone else or would the experience be fundamentally different somehow? Or maybe they'd just say "that is too low performance for this course"?

They would thank and congratulate you for showing up with the right amount of car. But bringing a car that isn’t responsive to driving inputs (e.g. bad understeer) is like attending a seminar with very long femurs - doable and valuable, but maybe more difficult and isolated.
