I miss our chest freezer. I gave it to my daughter when we sold our house and moved to a rental. Once we get our new house completed we will be ordering another chest freezer. And We plan to have a walkin cooler to handle the animals we butcher for ourselves.

Where I live in the south east of England (Kent), our neighbours are hobby farmers with sheep. Our next door neighbours have some sort of mountain/Shetland sheep. The advantage of these is that they are low maintenance - they're used to giving birth on their own. The disadvantage is that they are small, so not really worth slaughtering atthe lamb stage.
Typically when they're sent off, they are at the "hogget" stage which is between lamb and mutton. Very, very tasty.
