This is such a cool way to honor your father, by sharing the recipes and telling stories about him. I'm gonna go give my dad a hug today. Thank you, Rip. This is a very, very cool video and I can't wait to see the sirloin tip video!

Try frying in lard if you haven’t already.

Will definitely be trying this out. Do you ever put seasonings in the flour/breading? Sorry if I missed that in the video.

That would be perfect with a bit of haggis on top, that's tomorrow's dinner sorted.

Awesome show, though I was expecting your version of this particular recipe to include an ingenious method for harvesting of bacon grease.

Really enjoyed this. I lived in Vienna for a while when I was 21 and “Wiener Schnitzel” was a staple of my diet. Usually served with lemon wedges and fries. Also, even though the classic preparation was with veal, every restaurant used pork instead, just like Rip.

Chicken fried steak itself is practically a character in Dan Jenkins novel Dead Solid Perfect. It’s nominally about a journeyman golfer who’s in contention for the US Open, but much of the book is flash backs to him growing up in Fort Worth, eating chicken fried steak at Herbs Cafe, and wild behavior at Pascal High.

Rip, did your dad serve it with cream gravy or something else?

Cream gravy is the standard garnish. I hate the shit, and it makes the steak soggy, so I never make it.

It's just a piece of ham fried on the griddle.
