    Rip,
    Thank you for these Texas Café Classics. It brings back a lot of memories.

    Cafe meals were a staple for law enforcement back in the day. Dinner on second shift and if you worked third shift you could catch breakfast prior to getting off work. A couple were open 24/7, but most seemed to be a 0600 to 2300 operation.

    The logistics of the operation is fascinating. It is pretty easy to see how someone would develop an exceptional work ethic in such an environment. Food prep, customer service, receivables, budgeting, spoilage, storage, clean up…the list seems just about endless. The years your families place was open speaks to a lot of hard work, long hours and good will in your community.

    The camera work and lighting is very well done and your place look great. I look forward to having another drink or three there sometime.

    Do you still bump into people who remember eating at your Dad’s place?

    I'd imagine, like for me, it never gets old when someone asks Rip about the restaurant and if you 'were related to Charlie' or someone says 'man, I loved that place, went there every Wednesday for the chicken fried steak'.
