    I was thinking meat pies. Steak and Kidney are awesome. Especially freshly made in a small local shop.I don’t have a recipe but I’m asking my nephew who lives there. Someone here may have attempted to make them from scratch.

    ….traditionally served with mushy peas. Great stuff!

    This was one of the signature dishes from the long defunct NYC restaurant The Spotted Pig. Scroll down to the excerpt recipe at the bottom.

    I'll also pull some stuff out of Fergus Henderson's St. John cookbooks. The writing is worth the price even if you don't cook.

    I haven't made a traditional haggis in many years, but I do still enjoy this old Scottish method of smoking fish! I've got a really good shepherd's pie recipe too I'll have to find and share

    I wish I could get a recipe, but my grandmother who lived in Leeds til the mid 1950s used to always make Yorkshire pudding that was great.

    Lancashire hotpot

    A great way to serve lamb or mutton

    Brown some neck chops or other slow cooked cuts ideally on the bone - remove from pan

    Fry aromatics in the same pan onions and carrots but add celery if you have some

    Add some stock/broth maybe a little red wine/stout season and thicken with a little flour mixed with cold water

    Cover with a sheet of thinly sliced potato and apply a thin layer of oil with tiny dots of butter spread around

    Bake for about an hour

    Authentic recipe includes the kidneys

    I have no personal experience with this cuisine, other than the full English breakfast. I thought the pasties were empanadas.

    But maybe spotted dick deserves a mention, in honor of the haters.
