Great article Rip.
Have you ever seen something like digestive enzymes help actually absorb the nutrients, especially for older folks who have problems with that anyhow?
Maybe it's as simple as Betaine HCL capsules before a meal.

Might help. Try it and see.
Tried Betaine HCL (with pepsin) w/ a dinner and later a protein shake. Both seemed to digest a bit better.
Come to think of it, a popular whey supplement (mostly whey protein concentrate) used to include a protease enzyme. This was a while ago, but I had bought a new bottle and noticed it didn't digest nearly was well so I switched to an isolate. Turns out they had removed the enzyme.
Looks like they add peptidases to cattle feed too.
Rip, you wrote that eating a lot of bread is not a good idea for carb sources. Does this include higher quality bread, like sourdough that you buy at a bakery that goes bad in a few days, or were you thinking primarily about industrial scale grocery store bread that lasts for a few weeks?
I was just thinking about how easy it is to eat a bunch of bread and butter.
