I'm eating a lot of potatoes now They seem to be an easy food to "plug in". Not shying away from carbs in general, but I'm still trying to avoid the simple sugars. I vastly underestimated the effect that an aggressive weight loss diet would have, I really did. There was weight loss, but there was also drastic plate loss, and I can't have that.

Yeah, I was using a cup of white rice with my eggs every morning before the diet. Might go back to doing that again.

Rice and eggs sounds interesting. Toast is an option too

I know about the Japanese dish mentioned prior, but mine was a lot more simple. I just pre-cooked rice and kept it in old wonton soup containers, and would scoop out a cup of the stuff in the morning and threw it into the pan before adding the eggs I scrambled. It tasted really, really good, and added about 30g carbs to my breakfast.
