How would my gains be affected if I ate all my calories in just one meal a day
Again, the key point here is that I’d be eating as many as I would with three smaller meal. Would it make a difference?

You may not have energy during your training sessions. There are plenty of academic arguments against this but ultimately you will have to try it and find out.
