TIming rest between assistance on 5/3/1

I have been doing 5/3/1 for about 5 mos. I got into a pretty good groove and have been gaining strength but became over-trained using a BBB style template with 5x5 @ 70-75% of training max. I still haven't had to reset the weights but my life outside of lifting was really suffering from too much volume. I am trying to find a more sustainable assistance template. I have started to time my rest between assistance exercises and my program currently looks like:
Day 1: Press 5/3/1, DB row 3x10, dips, 3x10. 2 min. rest btwn rows and dip sets
Day 2: DL 3/2/1, Front squat 5x3, back squat 3x10. 1 min rest btwn FS, 2 min rest btwn BS
Day 3: Bench 5/3/1, Chins 3xf, press 3x10. 2 min. rest btwn chins and press
Day 4: Squat 5/3/1, Power Cleans 5x3, RDLs 3x10. 1 min rest btwn cleans, 2 min rest btwn RDLs
I am hoping that not using training max percentages for assistance and timing the rests between the assistance will keep the assistance weights low enough that I won't get over-trained. Does this seem like a good approach?
Background info: 5'10", 225 lb, 26 yo male, best squat 325x4, best bench 255x7, best DL 330x5, best press 180x2

Ya, I think that is basically fine. FSQT and BSQT on same day after deads seems like too much though. I'd probably just pick on variant per workout. The other days seem reasonable, although 2 mins rest isn't very much for presses, squats, cleans, RDLs, etc. 2 mins is fine for bodyweight stuff, curls, triceps, etc, but the bigger exercises I'd be doing 3-6 mins on assistance.
