Any advice on what assistance press to swap out the assistance bench with?

I remember this being mentioned somewhere before but don't remember the outcome

Using the rep scheme of the bench variation it's replacing?

What do I base the pin heights on week to week?

    Thanks for the advice

Sure. You could start at nose height for a few weeks and then up to forehead.

Pin press or paused presses would be suitable alternatives. Even a beltless press could be suitable.

    Quick side question...

for a 1.0 press the pause is an the bottom (?)
and the 2.0 press is paused where? (bottom?)

Incline bench might be a good option too.

Both could be paused on the ascent at the forehead.

I had a pec tear a few years ago from a sport (not lifting). I recently realized that this predisposes me to having a pec tear during bench press. So I have decided to minimize that chance by doing more press instead of benching.
