In terms of calories density and healthiness, extra-virgin olive oil is hard to beat.
It can be added liberally to salads, shakes, pasta and lots of other food.
Make sure you buy the proper, cold-pressed, first-pressed stuff, it's more expensive, but it's absolutely worth the money.

Don't worry about the amount of fat too much. Or what kind for that matter (excepting trans fats/hydrogenated oils). I rememeber hearing in a nutrition class that the kind of fats you eat only matters for heart health and little else. If you are doing starting strength you are probably not in that demographic so it doesn't matter if you have a lot of saturated fats vs healthy fats. This of course doesn't apply if you spend dollars on expensive medium chain trigliceride coconut oil or something like that.

+1. Liquid calories are much easier to take down in large quantities than solid calories.
