Is it acceptable to split up the workout throughout the day? Ex. Squat before work, bench press/press at lunch, deadlift after work? Thoughts?

Beats sitting on the couch doing nothing.

It isn't ideal, but it is far better than skipping half of the work due to time constraints. I'd at least try to section the squats and deads out together and then do the upper body stuff at a different time.

Can you elaborate on the drawbacks?

I've done it for years, the only downsides I can see are those that are logistical in nature (travel time, clothes, repeated warmups). For me, most of those logistical downsides don't really exist since I have no travel time due to training at home. Honestly, I'd make an argument there is a small positive impact from being able to train each lift in a less fatigued state. Being able to split up squats and deadlift was actually quite helpful.
