Feeling some soreness today.

I think if you are over 40 and starting out, I think it might make more sense starting with just the bar on all exercises but train 5 days in a row (with small increases) in the first week, just to eliminate doms altogether.
Then the second week becomes the actual start of LP.
Since I am feeling soreness, I figure I have created enough stress on the body for adaption to occur and probably should just rest.
I will try 3 sets tomorrow, most likely at same weight. No rush, consistency is the key here.
