Aside from the absolute weight, using those 25 lb plates will put the bar lower on your shins than 45s will. Can’t give good technique feedback with regard to that either.

Getting back into SS after a few years away due to concussions. Deadlift doesn’t feel quite right. It feels like I’m rounding my back, and I can’t get it more straight — do I need to do some hamstring stretches?

I don't think your back is rounding. At all. But then, you're doing these with the 25s, and they look way, way too light to do any good. Put like, a hundred pounds on these with full diameter plates and we'll see.
I am also getting the impression you are being somewhat neurotic about your back. Relax with that. The deadlift is not a lift to get neurotic about.
You cannot perform the deadlift correctly without the correct sized plates on the bar.
