I am 40 years old and have been training CrossFit for almost 20 years. CrossFit has been fun, but I don't think it's healthy. Now I will only train for health.

Do you think A hybrid model for olympic lifting in chapter 7 is the best way if I want strength training with olympic lifting? Or where should I look in the book? I will only train for health and will never compete.

Im 40, I need more than 1 squat session per week to maintain neuromuscular skill. Squat is more techincal a movement than people think.
There are more effective, efficient ways to arrange your programming and they can be found in the book Mr Rippetoe has linked in his reply.
