I don't have access to a power-cage at the moment, so squatting and benching are out for a few months.

How would you program deadlifts, press, chinups, pulling variations for me?
    DL 340lb 1x5
    Press 120lb 3x5
Chins 6 reps max per set.

    I'm 6'2, 220lbs.
Have a bar, plenty of time and 600lbs worth of plates.
Not long rehabbed from a hand fracture, was pressing 180lbs @ 170lbs for sets of 5 before the injury.

    I'm currently doing:
    M: DL + OHP +Chins
    W: PC + OHP (@RPE 6-7) + Chins
    F: DL + OHP + Chins

Sounds like you are doing what you can under the circumstances.

At least do some front squats. If you can power clean you can front squat.

For some variety, I found snatch grip deadlifts nice. And, if you have the time to sleep a lot and exhibit some suicidal tendencies, you can try the Russian Bear from Pavel.
