Get rid of the straps for a while until it gets better. You're overloading your elbows with a load you can't really hold on to and maybe hyperextending on the down step.
I added farmer's walks recently for conditioning (no prowler at my gym). I use straps to avoid chewing up my hands, and do a few laps around the gym, resting halfway through a lap and in between laps. A lap is about 420 feet by my count. I started a few workouts ago with 60lbs dumbbells and am up to 70lbs dumbbells now.
I'm sore from my shoulders down to my forearms, but I'm concerned about the elbow soreness. Is it normal from this?

I second Coach Nikolai's recommendation. You are missing a good deal of the grip work that farmer's walks provide by using straps.

If OP wanted to continue with straps, I think it would be beneficial to flex biceps with arms straight. When you grip you subconsciously tighten everything else
