Really trying to nail my form down. I envisioned myself 'folding' at the waist to attempt to lessen the overextension of my spine. Thoughts?

When you ascend, think about crunching down hard with your abs and driving your ass straight up.

Just a random thought, those adipowers have a pretty steep heel, particularly for low bar squatting. I've tried a the rogue do win 3/4 heel and my form changed pretty drastically giving me issues similar to yours. It cleared up once I went back to my old shoes which were the adidas powerlifts with a 0.60 heel. Rip also recommends a 1/2 heel. I know it doesn't sound like a few quarters of an inch would make a difference but in my opinion it does.

I lift in 3/4" Do Wins without issue as do lots of folks. His overextension problems are probably unrelated to his shoes.

I was overextending hay before the shoes came into play.
