I believe you recommend Gropper's Advanced Nutrition, however, it being 237 dollars would Exercise Metabolism by Hargeaves be a decent alternative to start, prior to a future windfall?

Having never read Hargeaves, I can't recommend it off hand. I would just get the electronic version of Gropper's for about 100 bucks IIRC. Save the rainforest and don't compromise your education, man.

I got Gropper's Advanced Nutrition International Edition on eBay for less than $60, newest edition.

I forgot to mention this, but you can also take Dr. Hargreaves' "Exercise Physiology" course on Courses for free.
