Coach Andy Lewis has a great article about training an airline pilot who had an irregular schedule. Truck driving is even more disruptive, but take a look:

I might be tempted to put a short barbell in the truck with just enough plates to work on my overhead press. If you went old school and cleaned the weight before pressing it, you could even skip toting the squat stands.
