Most of the time, I will have someone repeat the workout until they start regression. And 5 minutes is the minimum amount of rest time you should be taking between sets. Bump rest up to 6-8 minutes and see if that helps.

should I reset the first time I can't get my 3x5 on a lift or should I try same weight next time or add weight and hope for the best? I can feel on some of my lifts (bench and press) I'm near my 5RM, last time I had to rest 5 minutes between set 2 and 3 on the bench, but I did nail it. Though I think in smoe near future I will fail, how should I then go about for the next session?
