From a coaching perspective, would you instruct a trainee to wrap his thumbs around the bar only if he had trouble getting his elbows in the correct position?

That's the only time I coach the grip that way.

So, I've read the book cover-to-cover 3x and also skimmed different parts and this area has always been confusing. I really did think I was supposed to raise my elbows (in addition to a tight grip width and bunching up my traps). I've had non SSC trainers tell me to drop my elbows but I ignored them because they aren't SSCs. This is a very helpful clarification.

If one can get a closer grip and tighter back with the thumb wrapped around without bothering the wrist...would that be preferable??? I have noticed with some less flexible clients that wrapping the thumbs allows a closer grip and better back tightness. I just have them wrap the thumb, but would always love to hear your thoughts on it. Thanks in advance!

Thumbs-around loads the wrist. It may work fine, today. Long-term, the other way is better.

My brother and my girlfriend both started doing the program 3-4 weeks ago, and they both didn't like putting their thumb over the bar (neither did I when I started). But with their thumbs around the bar, their wrists and upper back became more loose.
Trying again with thumb over bar, wrist in a neutral position, they both said that it felt uncomfortable. What I did notice is that they were capable of doing it and their backs and wrists looked tighter and more stable, but they said it didn't feel good. So I told them it's supposed to be tight, and not necessarily comfortable. I hope I'm not causing them future injury.
